Annemarie

Working in the hospitality industry for almost 20 years of which 10+years in fine dining and Michelin star restaurants. During this time she developed a passion for wine and became a certified sommelier with a bachelors degree in gastronomy.
Annemarie moved to Bonaire in 2018 with her husband Mathieu. She is an avid diver and lionfish hunter, which you will maybe have a chance to taste in the restaurant.

Mathieu

During his education to become a chef he went to Switzerland to follow an internship there. He fell in love with the country and stayed there for 16 years. He became a sous chef of 3 restaurants at 21, one of which was Hotel Glockenhof, a renowned 4* business hotel in Zurich.
After that he worked in different high-end hotels and restaurants, familiarizing with French, German, Italian and Asian cuisine before coming back to Holland.
He met Annemarie whilst working as an executive chef in an hotel where she came and worked in the front of house. They share the enthusiasm for gastronomy and they started to travel to wine regions together.
Over time his interest in wine grew and he followed different wine courses and attending wine seminars.

Floyd

Floyd van Hees is 26 years old. Floyd has been working in the hospitality industry for about 10 years in and around Amsterdam. After his education to become a chef, he has been developing his skills in different restaurants and functions. For the last 2 years he’s been an executive chef in a Sweetwater Paviljoen, a triple A location with high quality service and food.
He has been visiting Bonaire for over 5 years for vacation and has recently made the move to the island indefinitely.

Working hours: Thursdays to Mondays from 5PM to 9PM (Tuesdays & Wednesdays upon request)
